There is something about a platter of golden fried chicken that feels like a welcome home. This recipe is inspired by Minny’s memorable Southern cooking in The Help, with the kind of crisp, comforting goodness that belongs at a table full of stories. It is a Screen Door Creations tribute, not an official recipe from the movie or book.

Ingredients
1 whole chicken, cut into pieces
2 cups buttermilk
2 cups all-purpose flour
2 teaspoons salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
Vegetable oil, for frying
Directions
- Place the chicken pieces in a large bowl and pour the buttermilk over them, making sure each piece is coated. Cover and refrigerate for at least 4 hours, or overnight for best results.
- In a large bowl, thoroughly combine the flour, salt, black pepper, garlic powder, onion powder, and paprika.
- Remove the chicken pieces from the buttermilk one at a time, allowing the excess buttermilk to drip off.
- Dredge each piece thoroughly in the seasoned flour, pressing the flour onto the chicken so it is well coated.
- Pour about 2 inches of vegetable oil into a large, heavy skillet or Dutch oven and heat the oil to 350°F.
- Working in batches so the pan is not overcrowded, carefully add the chicken to the hot oil. Fry, turning as needed, until deep golden brown and cooked through. Cooking time will vary depending on the size and type of chicken piece. The thickest part of each piece should reach an internal temperature of 165°F.
- Transfer the cooked chicken to a wire rack to drain. Paper towels may also be used. Serve hot.
