This recipe makes one 9×13 red velvet cake. One pan is not enough for the full sculpted armadillo. Bake two cakes for that centerpiece; see the larger two-pan recipe and assembly directions.

Ingredients
- Red Velvet Cake
1 1/2 cups unsalted butter, softened
2 1/2 cups granulated sugar
5 large eggs
3 cups all-purpose flour
2 tbsp cocoa powder
3/4 cup + 2 tbsp buttermilk
1 tbsp vanilla extract
1 1/2 tbsp red food coloring
3/4 tsp salt
1/2 tsp baking soda
1 tsp white vinegar
- Gray Vanilla Buttercream
1 cup unsalted butter, softened
3–4 cups powdered sugar
2–3 tbsp milk or cream
1 tsp vanilla extract
Black gel food coloring, a tiny amount
Directions
- Make & Bake the Cake
- Preheat oven to 325°F. Grease and flour a 9×13-inch metal pan.
- Cream butter and sugar until light and fluffy, about 3–4 minutes.
- Add eggs one at a time, beating well after each addition.
- In a separate bowl, whisk flour, cocoa powder, salt, and baking soda.
- Add dry ingredients alternately with buttermilk, beginning and ending with dry ingredients. Mix just until combined.
- Stir in vanilla and red food coloring. Add vinegar last and mix just until combined.
- Pour batter into the prepared pan and smooth the top.
- Bake at 325°F, beginning to check at 45 minutes. Continue baking until a toothpick inserted in the center comes out clean or with a few moist crumbs (about 45–60 minutes total). Do not overbake.
- Cool completely in the pan. Cover and chill for at least 8 hours (or overnight) before carving.
- For the Full Sculpted Armadillo
- This recipe makes one 9×13 cake, which is one cake for the full build.
- Bake a second batch in another 9×13 pan; one pan alone is not enough for the full sculpted armadillo.
- Chill both cakes overnight, then stack and carve them using the larger two-pan directions linked above.
- Use the carved trimmings for the snout, feet, and tail.
- Make the Gray Icing
- Beat the softened butter until creamy.
- Gradually beat in 3–4 cups powdered sugar.
- Add vanilla and enough milk or cream to reach a spreadable consistency.
- Start with white buttercream and add a tiny toothpick-tip amount of black gel food coloring.
- Mix thoroughly and let rest 5–10 minutes; the color will deepen slightly.
- Adjust with more black gel very slowly until light gray. Do not add blue or purple.
- Crumb Coat & Texture
- Apply a thin, even layer of gray icing over the entire armadillo.
- Chill until the icing is set.
- Add another layer as needed and use a fork or spoon to create the textured shell.
- Keep the finish rustic; it does not need to be perfect.
