Ingredients

  • 2 lbs 85/15 ground beef (ground chuck)

  • 2 large eggs

  • 1 cup plain breadcrumbs

  • ½ cup finely diced onion

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1½ tsp salt

  • ½ tsp black pepper

  • 2 Tbsp ketchup

  • GLAZE
  • ½ cup ketchup

  • 2 Tbsp brown sugar

  • ½ tsp dry mustard

Directions

  • Preheat oven to 350°F.
  • Combine all meatloaf ingredients in a large bowl until just mixed. Do not overmix.
  • Transfer mixture to a lightly greased loaf pan and shape evenly.
  • Bake uncovered for 60–70 minutes.
  • Mix ½ cup ketchup, 2 tablespoons brown sugar, and ½ teaspoon dry mustard. Spread over the meatloaf.
  • Bake 10 minutes more, or until the center reaches 160°F. Let rest 10 minutes before slicing.

Notes

  • You can use either plain breadcrumbs or quick oats in this old-fashioned meatloaf. Both work beautifully and help keep it tender. Avoid overmixing the meat, and don’t add the sweet and tangy glaze until the last 10 minutes of baking. For the best results, use a meat thermometer to make sure the center reaches 160°F. Let the meatloaf rest for 10 minutes before slicing so it holds together and stays juicy. Leftovers make wonderful meatloaf sandwiches the next day!
