Ingredients

  • 1/4 cup bacon grease or vegetable oil

  • 1/4 cup all-purpose flour

  • 2 cups whole milk, plus more if needed

  • 1/2 teaspoon salt, or to taste

  • 1/4 teaspoon black pepper, or to taste

Directions

  • Heat bacon grease or vegetable oil in a skillet over medium heat.
  • Stir in flour and cook for 1–2 minutes, stirring constantly, until smooth and lightly golden.
  • Gradually add milk, stirring continuously to prevent lumps.
  • Cook for 5–7 minutes, stirring frequently, until thickened.
  • Season with salt and black pepper. Add more milk if needed to reach your preferred consistency.
  • Serve hot over homemade biscuits.

Notes

  • Mama used bacon grease when she had it and vegetable oil when she didn’t. Either way, she made the best milk gravy! For thinner gravy, stir in a little extra milk until it’s just right. Serve hot over homemade biscuits.
