Ingredients

  • 1 (4–5 lb) beef brisket, flat or whole

  • 1 tablespoon cumin

  • 1 cup brown sugar

  • 2 tablespoons smoked paprika

  • 3 tablespoons dried mustard

  • 1 cup Lone Star beer

  • 2 teaspoons kosher salt

  • 1 1/2 teaspoons coarsely ground black pepper

  • 2 teaspoons garlic powder

  • 1 teaspoon onion powder

  • 2 tablespoons Worcestershire sauce

  • 1 cup beef broth

  • 1 tablespoon Better Than Bouillon, beef

  • 1 medium onion, sliced

  • 4 cloves garlic, smashed

  • 2 bay leaves

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons ketchup

  • 1 tablespoon barbecue sauce

Directions

  • Preheat oven to 275°F.
  • Pat brisket dry with paper towels. Trim excess fat, leaving about 1/4 inch.
  • In a small bowl, mix together cumin, brown sugar, smoked paprika, dried mustard, Lone Star beer, kosher salt, black pepper, garlic powder, onion powder, and Worcestershire sauce to form a paste.
  • Rub the mixture all over the brisket, coating every side.
  • Place sliced onion and smashed garlic in the bottom of a large roasting pan or Dutch oven. Add bay leaves.
  • Set the brisket fat side up on top of the onions and garlic.
  • In a bowl or measuring cup, whisk together beef broth, Better Than Bouillon, apple cider vinegar, ketchup, and barbecue sauce. Pour around, not over, the brisket.
  • Cover tightly with foil or a lid and bake for 5–6 hours, until the brisket is fork-tender.
  • Remove from the oven and let rest 30–60 minutes before slicing against the grain.

Notes

  • For a deeper bark, uncover the brisket for the last 30 minutes of cooking and baste. Slice against the grain for the most tender bites.
  • Young Sheldon note: This recipe is inspired by Meemaw’s famous brisket from Season 1, Episode 7, “A Brisket, Voodoo, and Cannonball Run.” Sheldon reveals several of Meemaw’s secret ingredients in the episode; this version completes the recipe into a full home-cookable brisket.
