Granny’s Spice Cake – Tea & Mimosa Tree Memories

Some people become family without ever sharing your last name. Growing up, I had a neighbor I called Granny. To me, she simply was my granny. When I think of her, I remember tea, the mimosa tree, and the kind of love that made ordinary afternoons unforgettable. This old-fashioned spice cake is a little tribute to those memories.

Ingredients

  • 1½ cups all-purpose flour

  • 1 cup packed brown sugar

  • 1 teaspoon baking soda

  • 1 teaspoon cinnamon

  • ½ teaspoon nutmeg

  • ¼ teaspoon cloves

  • ¼ teaspoon allspice

  • ½ teaspoon salt

  • ¼ cup melted butter

  • ¼ cup vegetable oil

  • ¾ cup unsweetened applesauce

  • 2 eggs

  • ½ cup buttermilk

  • 1 tablespoon molasses

  • 2 teaspoons vanilla extract

  • Optional Glaze
  • 1 cup powdered sugar

  • 2 tablespoons melted butter

  • 1–2 tablespoons milk

  • ½ teaspoon vanilla extract

Directions

  • Preheat oven to 350°F. Grease an 8×8 baking dish.
  • Whisk together flour, brown sugar, baking soda, spices, and salt.
  • Stir in melted butter, oil, applesauce, eggs, buttermilk, molasses, and vanilla. Mix just until combined.
  • Pour into dish and bake 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool completely. Dust with powdered sugar or drizzle with glaze if desired.

Granny’s note: For a simple, old-fashioned finish, a dusting of powdered sugar is lovely. Let the cake cool before slicing for neater squares.
